Wood-fire kitchen · Est. 2014

Seasonal plates, cooked over fire.

A short menu that changes with the market, char-grilled over wood and charcoal in the heart of the old quarter.

Our story

Olive & Ember is a fire kitchen built around one idea: cook with flame and whatever's in season, and let everything else follow from that.

The menu is short and it changes often — shaped by the morning market and the growers we've worked with for years. No two weeks taste quite the same, and that's the point.

“We cook with fire and whatever's in season. Everything else follows from that.”

In the kitchen

Marco Bianchi, head chef

Marco spent a decade cooking across Italy and the Basque country before opening Olive & Ember to cook the way he loves most: simply, generously, over an open flame.

He still works the pass most nights — so if you see someone tending the fire and grinning, that's him.
